The Best Way To Store Your Herbs

Herb, just like any other plant material, is vegetation—and that means it’s perishable. It has a natural shelf life, and how you store it makes a huge difference in maintaining freshness, potency, and flavor. Left exposed to light, air, and fluctuating temperatures, your herbs can dry out, lose their aroma, and degrade faster than you’d like.

Why Proper Storage Matters

Herbs contain delicate compounds like terpenes and other volatile organic compounds (VOCs). These compounds are what give your herbs their distinct aroma, flavor, and effects—but they’re also fragile. Over time, terpenes dissipate and VOCs break down, especially when exposed to air and warm conditions. This is why improper storage can lead to herbs that taste dull, feel harsh, or simply lose their spark.

Our Ideal Storage Method

After years of trial and error, we’ve found that the freezer is your herb’s best friend—when used correctly. Here’s the method we recommend:

  • Portion First
    Break your herb into weekly or bi-weekly portions. This way, you’re only handling what you need instead of thawing and refreezing larger amounts.
  • Vacuum Seal
    Place each portion in a vacuum-sealed bag with the air fully removed. This prevents oxidation and protects the structure of your herbs. Important:  seal the bag just before your herbs are crushed to keep them intact.
  • Freeze
    Store the sealed bags or jars in the freezer until you’re ready to use them. The cold slows down the degradation of terpenes and VOCs, preserving your herbs’ quality over time.
  • Transfer for Use
    When it’s time, remove a portion from the freezer and place it into bags or jars. From there, store them in a cool, dark space—like one of our cabinets—until consumed.
